Hit Detroit-Style Pizza Pop-Up Sets Opening Date for SoMa Location

Fans of Square Pie Guys have gone without pizza these past few weeks, as owners Danny Stoller and Marc Schechter take a break from pop-ups to prepare for their permanent location. But they won’t be waiting much longer, Stoller and Schechter say. Square Pie Guys will open in SoMa on July 16, serving more of the crispy-edged, rectangular pizzas for which they’ve developed a following.

At 1077 Mission Street, previously the Board, the duo has added a fresh coat of paint, some new neon signage, and a three-deck conveyor belt pizza oven. The dining room seats 48, but in addition to dine-in customers, Square Pie Guys will focus on take-out and delivery: Convenience is king, Schechter says, and Square Pie Guys will try to strike a balance between Pizzeria Delfina quality (Shechter’s old employer) and pizza-chain consistency and accessibility.

When it opens, Square Pie Guys will offer about 10 pizza varieties. Pop-up hits have included a classic pepperoni pie (a cheddar cheese edge, shredded mozzarella, exactly 48 pieces of Pavone cupping pepperoni, Chris Bianco’s Tomato sauce, $20) and an “el pugilista” (cheddar cheese edge, shredded mozzarella, Mexican chorizo, salsa roja, chopped white onion, tomato, pickled jalapeño, cilantro lime crema, $22).

The Detroit-style, developed at Motor City spots like Buddy’s, has enjoyed a huge surge in popularity well beyond Michigan. “Everybody in the pizza world is going crazy for square,” Schechter told Eater SF this spring. But it’s no passing fad, Schechter and Stoller are betting.

And besides, the new Square Pie Guys location will go beyond pizza: Customers will find more items like a burger, salads, and sandwiches. They’ve also nabbed a beer beer and wine license, and they’ve recently dialed in a recipe for a gluten-free pizza dough, too.
