This bird of prey is on the hunt for fried chicken. Falcon Holdings is a leading franchisor of Church's Chicken (owned by Cajun's Operating). Falcon's more than 150 restaurants in 11 states, from Michigan to Georgia, serve up the Church's fare -- a straightforward menu of fried chicken and sides such as biscuits, mashed potatoes, corn on the cob, fried okra, French fries, and cole slaw. CEO Aslam Khan bought his first 100 restaurants in 1999 from the now-bankrupt Atlanta Franchise Development Co., and grew his portfolio of restaurants by purchasing distressed franchises and implementing new accounting and finance software. Falcon Holdings is owned by Khan and private equity firm Sentinel Capital Partners.
